Ingredients

  • 3 cups Self-rising flour (See note below to make self-rising flour from all-purpose flour)
  • 1 teaspoon salt
  • 4 Tablespoons sugar
  • 1 12-oz. flavorful beer such as a bock (or 1½ cups )
  • 4 Tablespoons olive oil or melted bacon grease, OPTIONAL

Instructions

  1. Preheat oven to 365°F. In large bowl mix dry ingredients together, then slowly add beer & stir to combine.

  2. Transfer batter into oiled 9×5 loaf pan and bake on middle rack for 45-55 minutes, or until crust is nicely browned.

  3. NOTE: If a softer crust is desired, remove pan from oven when only 10 minutes baking time remains and pour 3-4 tablespoons of olive oil (or melted bacon grease) evenly over the surface of the loaf. Then return pan to the oven for the remaining 10 minutes baking time.

  4. When baking is complete, remove the pan from the oven and allow to cool for 10 minutes. Then carefully remove bread from pan and place on baker’s rack. Cover the warm bread with a clean kitchen towel & allow to cool completely.
